01 / Overview
Roasted rice powder, rava and flour start as raw or damp material that must be dried and cooked through without burning. The Steam Roaster does this in a jacketed pan. Steam from a boiler passes through the wall around the pan, so the heat reaches the batch through the metal and no flame touches it.
Stirrer and scraper arms, turned by a drive at the centre, keep the batch moving and clean the heated wall, which stops powder settling and scorching in one spot. A door at the side lets the finished batch out. It belongs to our range of multi-purpose roasters, which process powders, liquids and semi-solids.
Rice powder units place it after the pulveriser and ahead of the sifter. Ayurvedic makers use the same pan for gentle roasting of churna ingredients. Sizes run from 50KG to 1500KG, and a boiler has to be supplied alongside it. We also make boilers to go with it.
02 / Construction & use
Features
- Double-walled pan carries boiler steam in its jacket, so the batch is heated through the wall, not by flame.
- Steam pressure limits the surface temperature, which lowers the chance of scorched specks in rice powder.
- Stirrer and scraper arms from a centre drive keep the batch moving and clean the heated wall.
- Side discharge door lets the roasted batch out without lifting the pan.
- Stainless steel pan on legs, easy to wash down between rice powder and ayurvedic batches.
- Three-phase motor drives the stirrer; the heat itself comes from the boiler's steam.
Used to make
- Puttu podi and idiyappam podi from rice powder
- Rava and semolina roasting
- Wheat and ragi flour roasting
- Roasted gram and besan
- Ayurvedic churna ingredients, roasted gently
- Lehyam and other semi-solids cooked in the jacketed pan
03 / Choosing
- Electric Roaster
The Electric Roaster does the same job on electric heating and needs no boiler, but it takes smaller batches than steam. Choose steam for large batches and an existing boiler; choose electric where no boiler is installed.
- Uruli Roaster (LPG)
The Uruli Roaster (LPG) heats the pan directly with a gas flame and is built for smaller batches. Pick steam for the larger batches, or where an open flame beside the powder is unwelcome.
04 / Questions
Does the Steam Roaster need a boiler?
Yes. The jacket is heated by steam, so a boiler must supply it. We also make boilers, so the boiler can be sized to the roaster when you place the order, and the steam line planned with it.
Why roast rice powder with steam instead of a direct flame?
Steam gives gentle heat and there is no flame at the pan, so burnt specks and patchy colour are less likely in puttu podi. It suits large batches, where a hand-fired uruli would be hard to control.
Can the Steam Roaster cook lehyam or other semi-solids?
Yes. Our roasters process powders, liquids and semi-solids, so a thick preparation such as lehyam can be cooked in the jacketed pan. A paste needs different agitation from dry powder, so tell us the product and we will fit the stirrer arms to it.
